Ingredients:
- 1 lb. noodles (oriental)
- 1 tbl. peanut oil
- 2 tbl. chopped garlic
- 1 tbl. onion
- 1 1/4 c. coconut milk
- 1/2 tbl. curry paste
- 1 tsp. salt
- 1 tsp. sugar
- 2 tbl. soy sauce
- 1/2 tsp. turmeric
Directions:
Cook noodles and cool in cold water. Heat wok or pan, add oil and stir-fry onion and garlic 2 min. Stir in coconut milk, turmeric, curry paste, salt, sugar and soy and simmer 4 min. Allow to cool. Toss with drained noodles.Serve within 3 hours.
