Ingredients:
- Eggs, at least two
- Cheese (cheddar, swiss, gruyere etc.)
- dash of milk if using a drier cheese (skip if a wet cheese)
- salt
- pepper
- spice to taste (we often use adobo, but parsley, chilli, all work)
Directions:
- Preheat pan with butter
- scramble eggs in bowl, fluff a bit
- add salt and spices
- Then add cheese
- Toss into hot pan, let solidify on the bottom before moving it around
- Serve just before it looks done, it will finish cooking once off the heat
