Ingredients:


  • Eggs, at least two
  • Cheese (cheddar, swiss, gruyere etc.)
  • dash of milk if using a drier cheese (skip if a wet cheese)
  • salt
  • pepper
  • spice to taste (we often use adobo, but parsley, chilli, all work)


Directions:


  1. Preheat pan with butter
  2. scramble eggs in bowl, fluff a bit
  3. add salt and spices
  4. Then add cheese
  5. Toss into hot pan, let solidify on the bottom before moving it around
  6. Serve just before it looks done, it will finish cooking once off the heat
