Ingredients:

  • 3 eggs
  • 2 c. sugar
  • 1 c. oil
  • 1 tsp. vanilla
  • 2 c. flour
  • 2 tsp. cinnamon
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 c. chopped walnuts
  • 4 c. thinly sliced apples

Frosting:

  • 6 oz. softened cream cheese
  • 1/4 melted butter
  • 2 c. sifted confection sugar
  • 1 tsp. lemon juice
  • 3 med. potatoes, sliced and
  • 4 oz cheddar cheese, cubed

Topping:

  • 1/2 cup of milk
  • 2 oz cheddar cheese, grated
  • 1/2 tsp. dry mustard


Directions:


Preheat oven to 350. Grease 13x9 in. pan. Beat eggs in large mixing bowl. Mix sugar, oil and vanilla in small bowl. Stir flour, cinnamon, baking soda and salt together. With mixer on medium, beat sugar mixture into eggs. Beat in flour mixture,adding 1/2 at a time. Stir in nuts with spoon. Arrange apples in prepared pan. Spoon batter (it will be thick) over apples, spreading to cover. Bake until batter is golden, about 45 min. Cool completely.

For frosting, beat cream cheese until fluffy
