Ingredients:

  • 8 medium potatoes, cooked, peeled and coarsely chopped
  • 4 hard boiled eggs, chopped
  • 1 small onion, finely chopped
  • 1 stick celery, finely chopped
  • 1 red pepper, coarsely chopped
  • 1/2 tsp. cayenne
  • 1 tsp. salt
  • 1/4 tsp pepper
  • 2 tsp. prepared mustard


Green Onion Salad Dressing:

  • 1 cup vegetable oil
  • 1 egg
  • 1/2 cup finely chopped green onions
  • 1 1/2 tbl. brown mustard
  • 1 tbl. white vinegar
  • salt and pepper


Directions:


Salad Dressing: Whiz egg in processor, gradually add oil in thin stream. When thick add remaining ingredients and blend thoroughly. Refrigerate until ready to use. In a large bowl combine all ingredients, mixing well. Refrigerate until ready to use.
