Sue's Red Sauce w/ Sausage & Meatballs
Ingredients:
- 1 lb sausage
- 1 lb ground beef,
- 1 cup breadcrumbs,
- 1 egg
- 1 large or 2 medium onion, chopped
- 2 carrots, chopped
- 2 to 6 cloves garlic, chopped or pressed
- 1 - 2 cups red wine
- 6 large cans tomatoes, crushed
- oregano and basil
- salt and pepper
- spaghetti
Directions:
Roast sausage in the oven (don't pierce. About 375 for 15 minutes). Add some olive oil pot, add onions, carrots, sweat for about 5 minutes. Add the wine, and bring to boil -- let it reduce for a minute or two. Add tomatoes, seasonings, & garlic. Add sausage. Prepare meatballs. Mix beef, breadcrumbs, egg, parm cheese (if desired), seasonings, and lots of salt and pepper. Form into meatballs, and roast in 450 degree oven about 5-8 minutes. Drop into simmering sauce. Cook at least an hour. Up to 3 hours. Taste and adjust. Can always be frozen. Any meat can go into this - pork chops are great, leftover brisket, or even meatloaf. You can use all sausage or all meatballs. It can always take more garlic or more wine. If you don't have red wine, use white wine, vodka, sherry or brandy. Or beer, if that's all you have. If you don't have carrots, use about 1/2-1 tsp of sugar, to cut the acid of the tomatoes. Mushrooms are great in it too. If you have fresh basil and parsley, add at the end of cooking (just before serving) Always use lots of salt and pepper.
